Chicken Enchiladas

Chicken Enchiladas
2 cups cooked, shredded chicken
1/2 cup diced onion
1 cup sour cream
1 can cream of chicken soup
1 (4 oz) can green chiles
1/2 tsp black pepper
1 tsp salt
1 tsp garlic powder
1/2 tsp chili powder
1 1/2 cups grated cheese, divided
1 package flour tortillas


Saute onions in oil for a few minutes. Combine chicken, onions, sour cream, soup, green chiles, spices, and 1 cup of the cheese. Mix well. Place chicken mixture in tortillas and roll up. Place in a greased baking dish. Pour remaining chicken mixture on top. Top with remaining cheese. Cover with foil and bake at 350 for 35 minutes. Remove foil for the last 5 minutes of cooking.

Eclair Cake

I know this picture isn't great but I promise this is so good. This is one of my favorite desserts to make. You have to plan ahead and make it the day before but it is really simple to make. I love it!!!

Eclair Cake
2 1/2 packages graham crackers
2 (3.4 oz.) packages instant French vanilla pudding mix
3 1/2 cups milk
1 Cool Whip

Chocolate sauce:
3 Tbsp melted butter
2 Tbsp vegetable oil
1 1/2 cups powdered sugar
6 Tbsp cocoa powder
2 tsp corn syrup
3 Tbsp milk
2 tsp vanilla

In a large bowl, mix the pudding and milk for 2 minutes. Blend in cool whip. Spray the bottom of a 9x13 pan with cooking spray. Line the bottom of the pan with a single layer of graham crackers. Cut them to fit if necessary. Layer half of the pudding mixture on the crackers. Add another layer of crackers, the rest of the pudding mixture, and a final layer of crackers. Refrigerate for two hours. For the chocolate sauce, mix melted butter, oil, powdered sugar, and cocoa powder in a small bowl. Add corn syrup, milk, and vanilla and mix until smooth. Pour over 3rd layer of crackers. Cover and refrigerate overnight.

Makes 24 squares

Navajo Tacos

Navajo tacos usually take more time than I'm willing to put in so this is my simpler version. For the scones I use frozen bread dough. You could make homemade scones if you want but I think this way is a lot easier. The chili I use in this recipe is the same chili used for Texas Chili Pile On. It's a really simple quick recipe that is so tasty.

Navajo Tacos


1 loaf frozen bread dough, thawed
vegetable oil

Chili ingredients:
1 lb ground beef
1 1/2 cups water
2 (15 oz) cans ranch style beans, undrained
8 oz can tomato sauce
1 tsp cumin
3 Tbsp dry onion soup mix
2 Tbsp chili powder
1/2 tsp garlic powder
salt to taste

Toppings:
grated cheese
chopped lettuce
chopped tomatoes
sliced green onions
sliced olives
sour cream
salsa

To make chili:
Brown ground beef and drain. Add all remaining chili ingredients. Bring to a slow boil. Reduce heat and simmer for 25 minutes.

To make scones:
Cut bread dough into six equal pieces. Roll each piece out evenly. Each piece should be a 4-5 inch circle. Heat oil in a large skillet. Fry each piece of dough until it puffs up and is brown on both sides, about 2 minutes on each side. Remove from oil and place on paper towels. 

To serve:
Place chili on top of scones. Top with desired toppings.

Creamy Crock Pot Chicken and Noodles

Creamy Crock Pot Chicken and Noodles
6 boneless skinless chicken breasts
1/2 cup chopped onion
1 clove garlic, minced
1 can diced tomatoes, drained
1 cup sliced fresh mushrooms
1 tsp salt
1/2 tsp ginger
2 tsp paprika
1/2 tsp chili powder
1/2 cup half and half


Place chicken in crock pot. Combine remaining ingredients except for half and half. Pour over chicken. Cook on low for about 5-6 hours. Before serving, shred chicken and add half and half. Serve over fettuccine noodles.

Chicken Tetrazzini


Chicken Tetrazzini
adapted from Kraft Food and Family

8 oz. spaghetti
1 to 1 1/2 lbs chicken breasts, cubed
1/2 cup bell pepper, chopped
1 cups sliced mushrooms
4 oz. cream cheese, cubed
1/4 cup flour
2 cups chicken broth
4 Tbsp. parmesan cheese, divided
1/2 cup mozzarella cheese, shredded
salt and pepper to taste

Cook pasta as directed on package. Drain and set aside. Heat olive oil in a large skillet. Add chicken. Cook for about 5 minutes. Add mushrooms and bell pepper. Cook until chicken is cooked through. Remove from skillet and set aside. Place cream cheese, flour, and broth in the skillet. Cook and stir with wire whisk until boiling. Reduce heat to medium-low; simmer 5 minutes, stirring frequently. In a 9x13 baking dish, combine pasta, chicken mixture, 2 Tbsp parmesan cheese, salt, pepper, and sauce. Mix well. Cover with foil and bake at 350 for 25 minutes. Top with mozzarella and remaining parmesan cheese. Return to oven until cheese is melted.

Cobb Salad with Bleu Cheese


I love bleu cheese! It's probably one of my favorite foods. I know it's an acquired taste and some people don't like it. If you don't like it you can make this salad with your favorite dressing and use a different kind of cheese in the salad. Either way it would be so good. This recipe was adapted from My Kitchen Cafe.

Cobb Salad with Bleu Cheese
1 cup crumbled bleu cheese, divided
1/4 cup extra virgin olive oil
2 Tbsp red wine vinegar
1/4 tsp salt
1/2 tsp pepper
8 slices bacon, chopped
1 lb chicken, cut into 1/2 inch pieces
salt and pepper
1 head romaine lettuce, chopped
1 pint cherry tomatoes, halved (I used 2 chopped roma tomatoes)
2 avocados, chopped
3 hard boiled eggs, peeled and quartered


Dressing:
In a food processor, place 1/2 cup bleu cheese, olive oil, vinegar, salt, and pepper. Process until combined.


Cook bacon until crisp. Remove and place on a plate lined with a paper towel. Drain all but 1 Tbsp of fat from the pan. Season chicken with salt and pepper. Cook chicken in bacon fat until cooked through. 


Toss lettuce with tomatoes, remaining bleu cheese, chicken, bacon, avocados, and eggs. Serve with dressing. 


Serves 4-6

Gumball Machine Cake

I saw this cake in a Parenting magazine at the doctor's office and I thought it would be perfect for my six year old's birthday. He loves gumballs. He has to have one every time we go to the mall. So I looked it up online and it wasn't too difficult. I've tried to make creative cakes before but they take way too much time and it's just not worth it. If it's more difficult than this one, I won't make it.  I'm not the best cake decorator and I get frustrated when it doesn't turn out right. But I thought this turned out really cute and my little boy loved it!

Gumball Machine Cake


I used the recipe for the Simple Sprite cake and buttercream frosting

1 cake baked in a 1-quart pyrex bowl (I used a 1.5-quart bowl)
1 cake baked in a 3 by 5 inch loaf pan
frosting
red food coloring
3/4 cup M&Ms
4 red licorice twists
1 red Tootsie Pop
black decorative icing

Cut the loaf cake into two pieces. One piece should be 2 inches long and the other piece 3 inches long. Place the 2 inch piece at the top of the bowl cake and the 3 inch piece at the bottom of the bowl cake. Reserve one cup of the frosting. Mix with food coloring. Frost the bowl with the plain frosting. Place M&Ms on the cake. Frost the two loaf pieces with red frosting. Trim licorice and place around the edges of the base cake and the bottom edge of the top cake. Place the Tootsie Pop in the top of the cake. Pipe a black line on the bottom of the red cake for the gumball machine's opening.

Spaghetti Casserole


I know this isn't the best picture but I promise this is really good. You only need about half of the sauce that this recipe calls for. So instead of halving it, I just use half of the sauce for this recipe and then freeze the rest. Then I can either make spaghetti, lasagna, or another batch of this.

Spaghetti Casserole
1 lb ground beef
1/2 cup chopped onion
1/2 cup chopped green pepper
2-3 cloves garlic, minced
2 cups beef broth
1 (14.5 oz.) can diced tomatoes, undrained
2 (8 oz.) cans tomato sauce
2 (6 oz.) cans tomato paste
1 1/2 tsp basil
1 1/2 tsp oregano
1 cup sliced mushrooms
1 can sliced olives
2 Tbsp sugar
2 cups mozzarella cheese
1 cup sour cream
1 cup cottage cheese
4 oz. cream cheese, softened
1/2 cup parmesan cheese
12 oz. spaghetti


Brown ground beef with onion, green pepper, and garlic; drain. Add beef broth and bring to a boil; reduce heat. Add tomatoes, tomato paste, tomato sauce, and seasonings. Bring to a boil and reduce heat. Add mushrooms, olives, and sugar. Simmer while spaghetti is cooking. Mix cream cheese, sour cream, cottage cheese, and parmesan cheese together. Spread in a 9x13 baking dish. Place cooked spaghetti on top of cheese mixture. Pour half of the sauce on top. Top with mozzarella cheese. Cover and bake at 325 for 30-40 minutes. Remove cover and place under the broiler for 5 minutes until the cheese is lightly browned. 


Serves 8

Alice Springs Chicken

I've had this recipe for a while. I got it from a cookbook that my mother-in-law gave me. It has a bunch of recipes that people have submitted. After I had made it a few times I realized that Outback Steakhouse makes this. I altered the recipe slightly so I guess it's my own variation of it. This is one of my husband's favorite dishes that I make. It is so good.

Alice Springs Chicken
4-6 boneless skinless chicken breasts
1 cup sliced mushrooms
8 slices bacon, cooked or precooked
1 cup shredded cheddar cheese
1/2 cup dijon mustard
1/2 cup honey
1 1/2 tsp vegetable oil
1 tsp lemon juice


Mix together dijon, honey, vegetable oil, and lemon juice. Pour half of the sauce over the chicken. Marinate for a few hours. Saute mushrooms in 1 Tbsp butter. Place chicken in a baking dish. Pour remaining sauce over chicken. Place bacon slices on top of chicken. Top with half of the cheese. Place sauteed mushrooms on top. Top with remaining cheese. Bake at 350 for 30 minutes.
