Chocolate Toffee Shortbread Bars

Chocolate Toffee Shortbread Bars


crust:
1 1/2 cups flour
1/2 tsp salt
1/4 tsp cinnamon
2 sticks butter at room temperature
1/2 cup brown sugar
1/4 cup granulated sugar
1 tsp vanilla
3 oz. (1/2 cup) bittersweet, semisweet, or milk chocolate

topping:
6 oz. (1 cup) bittersweet, semisweet, or milk chocolate
1 cup toffee bits or 4 Heath bars, chopped

Preheat oven to 375. Line a 9x13 pan with foil and lightly grease. In a medium bowl, whisk together flour, salt, and cinnamon; set aside. Place butter in a bowl of a stand mixer. Beat 3 minutes, until smooth. Add brown sugar and granulated sugar and beat for 3 minutes. Add vanilla and mix briefly. Add flour mixture gradually until almost incorporated. Add chocolate and mix until dry mixture is fully incorporated. Do not overmix.  Pour dough into prepared pan and press down. Bake for 18-20 minutes. Remove from oven and sprinkle  6 oz of chocolate over crust. Cover pan with foil and let sit for 5 minutes to melt chocolate. Remove foil and spread chocolate over crust. Sprinkle toffee over chocolate and press down gently. Cool before serving. (You might need to put it in the freezer for 10 minutes to set chocolate.)

Almond Roca Toffee

I think I've gone a little overboard with making Christmas treats this year. One of my biggest weaknesses is Christmas treats. If they're in my house I can't stop eating them. I have no self control. Here is another yummy treat for you to enjoy!

Almond Roca Toffee
adapted from My Kitchen Cafe

1 cup salted butter
1 cup sugar
2 (3 oz) pkg slivered almonds
1 pkg milk chocolate chips
1 (3 oz) pkg sliced almonds

Line a 9x13 baking dish with foil and spray with cooking spray. Melt butter over low heat. Add sugar. (If you are using unsalted butter add 3/4 tsp salt) Stir until sugar is dissolved, about 5-6 minutes. Increase heat to medium. Stir until mixture is golden brown. Add slivered almonds. Once mixture comes to a boil, clip a candy thermometer on the side of the pan. Continue stirring over medium heat as mixture darkens and reaches the hard crack stage which is a temperature of 300 degrees. Immediately take off stove and spread into prepared pan. Sprinkle chocolate chips on top and let melt. Put a foil tent over the pan to keep in the heat. Once the chocolate is melted, smooth with a spoon. Sprinkle almonds on top. Cool in fridge and crack into pieces.

Chocolate Chip Toffee Bars

I got this recipe from My Kitchen Cafe. We went to dinner at my parents' house last night and I made these bars for dessert. It was a big hit. Everyone loved them. They are so good!

Chocolate Chip Toffee Bars
2 1/3 cup flour
1/4 tsp. salt
2/3 cup brown sugar
3/4 cup butter, softened
2 eggs, slightly beaten
2 cups chocolate chips, divided
1 cup chopped nuts (optional)
1 can sweetened condensed milk
1 package toffee bits, divided


Preheat oven to 350. Spray a 9 x 13 pan with cooking spray. Whisk together flour, salt, and brown sugar. Cut in butter with a pastry blender or fork until mixture is crumbly. Add eggs and mix with a wooden spoon. Stir in 1 1/2 cups chocolate chips and nuts. Set aside 1 1/2 cups of the dough. Press the remaining dough into the pan. Bake for 10 minutes. Pour sweetened condensed milk evenly on top. Top with all but 1/3 of the toffee. Place remaining dough on top. Sprinkle with remaining chocolate chips. Bake for 25-30 minutes until golden. Sprinkle with remaining toffee. Cool completely before cutting. 


Makes 24 bars
