Eclair Cake

I know this picture isn't great but I promise this is so good. This is one of my favorite desserts to make. You have to plan ahead and make it the day before but it is really simple to make. I love it!!!

Eclair Cake
2 1/2 packages graham crackers
2 (3.4 oz.) packages instant French vanilla pudding mix
3 1/2 cups milk
1 Cool Whip

Chocolate sauce:
3 Tbsp melted butter
2 Tbsp vegetable oil
1 1/2 cups powdered sugar
6 Tbsp cocoa powder
2 tsp corn syrup
3 Tbsp milk
2 tsp vanilla

In a large bowl, mix the pudding and milk for 2 minutes. Blend in cool whip. Spray the bottom of a 9x13 pan with cooking spray. Line the bottom of the pan with a single layer of graham crackers. Cut them to fit if necessary. Layer half of the pudding mixture on the crackers. Add another layer of crackers, the rest of the pudding mixture, and a final layer of crackers. Refrigerate for two hours. For the chocolate sauce, mix melted butter, oil, powdered sugar, and cocoa powder in a small bowl. Add corn syrup, milk, and vanilla and mix until smooth. Pour over 3rd layer of crackers. Cover and refrigerate overnight.

Makes 24 squares
