Migas

If you're like me, you might be wondering what Migas is. It's a tex mex breakfast dish with eggs, bell peppers, jalapenos, onions, cheese, and chopped fried tortillas. Yum! I made this for my husband on Father's Day. We both loved it but I think it was a little too gourmet for my kids. I think if I would've added sausage or ham they would've liked it a lot more.

Migas
12 large eggs
1/4 cup half & half 
4 whole corn tortillas
vegetable oil for frying
1 Tbsp butter
1 Tbsp olive oil
1 green bell pepper, chopped
1 red bell pepper, chopped
1/2 cup onion, diced
1 jalapeno, diced (seeds removed, if desired)
4 plum tomatoes, chopped
1 cup shredded cotija cheese (may use cheddar, monterey jack, etc.)
1/3 cup cilantro, chopped

In a bowl, whisk together eggs and half & half. Season with salt and pepper to taste. Set aside.

In a small skillet over medium heat, heat vegetable oil and fry each corn tortilla until crisp. Drain on a paper towel-lined plate. Chop tortillas and set aside.

In a large skillet over medium-high heat, melt the butter with the olive oil. Add onions and bell peppers and cook until soft, about 3-4 minutes. Add jalapenos and stir to combine. Add tomatoes and stir. Add tortilla pieces, stirring gently to combine.

Reduce heat to medium-low. When the heat has decreased, pour the egg mixture into the skillet. Stir gently to cook with the veggies, folding mixture gently as it cooks. When eggs are cooked through, add cheese and cilantro and stir to combine.

Serves 6

Biscuits and Gravy

This is my favorite breakfast ever! My husband makes this all the time. (I'm not a breakfast maker!) He always just throws in a bunch of ingredients but he never measures or keeps track of how he makes it. Now that he's perfected it, he decided to write down the recipe so we'll know for the future. Here is his delicious recipe. Enjoy!

Printable Recipe

Biscuits and Gravy
1/2 lb sausage
1/4 cup Wondra (quick mixing flour)
3 cups 1% or 2% milk
1/4 tsp cumin
1/4 tsp garlic powder
1 tsp dried parsley
salt and pepper to taste
biscuits (homemade or refrigerated)

In a large skillet, cook sausage until browned. Stir in wondra to coat sausage. Slowly stir in milk. Stir continuously over medium-high heat until thickened. Reduce heat and stir in cumin, garlic powder, parsley, salt, and pepper. Serve over biscuits.

Serves 6

Breakfast Tacos

I'm not really a breakfast person. It just takes too long to make and I always have so many other things to do in the morning. Dad is the breakfast maker in our house. My husband came up with the idea of making breakfast tacos. If you can have breakfast in a burrito, then why not have it in a taco? It's pretty basic and you can make it pretty much any way you want. I just wanted to share the idea.

Breakfast Tacos


scrambled eggs
bacon or sausage
cilantro
salsa
cheese
corn tortillas

Place tortillas on a hot griddle and top with cheese. Heat until cheese is melted. Assemble tacos with eggs, bacon or sausage, and salsa. Sprinkle with cilantro.

Breakfast Casserole

Every year we have breakfast at my parents' house on Christmas morning. I wanted to find something that can be made the night before so we don't have to make anything Christmas morning. My husband's cousin made this for her son's mission farewell about a month ago and I thought it was so good. I thought it would be perfect for Christmas morning.

Breakfast Casserole


12 eggs
1 cup evaporated milk
1 tsp salt
1/2 tsp pepper
1 pkg. frozen shredded hashbrowns, thawed
2 cups cheddar cheese
1 medium onion, diced
1 medium green pepper, diced
1 cup ham, cubed

Whisk together eggs. Add salt, pepper, and milk. In a separate bowl, combine hashbrowns, cheese, onion, green pepper, and ham. Pour into a greased 9x13 baking dish. Pour egg mixture over hashbrown mixture and mix together. Cook uncovered at 350 for 45-55 minutes.

*This can be made the night before.

Stuffed French Toast

Like I said before, I rarely make breakfast. So if I ever post a breakfast recipe on here, chances are my husband made it. This morning he made stuffed french toast. It was so good. I'm usually not a big fan of waffles, pancakes, or french toast. It's too sweet for me first thing in the morning. But with this french toast, the cream cheese in the filling balances out the sweetness of the syrup. I loved it! The fun thing about this recipe is you can try different flavors of cream cheese and different berries so it can be different every time.

Stuffed French Toast 
1 loaf French bread
8 oz tub whipped cream cheese (any flavor)
1/2 cup frozen blueberries (or any other fruit you want), thawed and drained
6 eggs
2 Tbsp milk
salt and pepper 


Cut bread into 2 inch slices. In each piece of bread, cut a slit almost all the way through, creating a pocket. Combine cream cheese and berries. Spoon into the pockets in the bread. Combine eggs, milk, salt, and pepper. Dip bread into egg mixture. Cook bread on both sides until done. Serve with syrup.

Breakfast Burritos

It's very rare for me to make breakfast. My husband is the breakfast cook in our house. I think it takes too long to make and I always have so many things to do in the mornings. I usually just feed my kids cereal. But when I do make breakfast this is one of my favorite things to make.

Breakfast Burritos
1/2 lb ground sausage
1/2 cup fresh mushrooms, sliced
1 green onion, sliced
1/4 cup green pepper, chopped
6 eggs
1/8 cup milk
flour tortillas
shredded cheese


Heat a non-stick skillet over medium heat. Add sausage. Cook for about 3-4 minutes. Add mushrooms, green onion, and green pepper. Cook until sausage is cooked through. Remove from pan. In a separate bowl, combine eggs and milk. Sprinkle with salt and pepper. Beat well. Pour into skillet. Cook until eggs are almost cooked through, stirring frequently. Add sausage mixture. Cook until eggs are done. Place tortillas on a plate one at a time. Sprinkle with cheese. Microwave for about 30 seconds until cheese is melted. Place egg mixture on tortilla and roll up.
