Verde Chicken Mexican Lasagna

Verde Chicken Mexican Lasagna
1 lb chicken, cooked and shredded
1 (16 oz) container sour cream
1 (15 oz) can black beans, rinsed and drained
1 1/2 cups green salsa
1 1/2 cups frozen corn, thawed and drained
1 tsp garlic powder
1/2 tsp cumin
1 tsp chili powder
1 tsp salt
1/3 cup chopped cilantro (plus additional for garnish)
12 soft taco size flour tortillas
2 cups shredded cheddar cheese

Preheat oven to 350. Mix together chicken, sour cream, black beans, salsa, corn, spices, and cilantro in a large bowl. Cut tortillas in half. Spoon 1/3 of the chicken mixture into a 9x13 baking dish. Spread evenly. Place one layer of cut tortillas (about 4) on chicken mixture to cover. Top with 1/3 of the shredded cheese. Repeat with chicken mixture, tortillas, and shredded cheese two more times. There should be 3 layers total. Bake for 30-35 minutes or until heated through and bubbly. Top with additional cilantro.

Breakfast Casserole

Every year we have breakfast at my parents' house on Christmas morning. I wanted to find something that can be made the night before so we don't have to make anything Christmas morning. My husband's cousin made this for her son's mission farewell about a month ago and I thought it was so good. I thought it would be perfect for Christmas morning.

Breakfast Casserole


12 eggs
1 cup evaporated milk
1 tsp salt
1/2 tsp pepper
1 pkg. frozen shredded hashbrowns, thawed
2 cups cheddar cheese
1 medium onion, diced
1 medium green pepper, diced
1 cup ham, cubed

Whisk together eggs. Add salt, pepper, and milk. In a separate bowl, combine hashbrowns, cheese, onion, green pepper, and ham. Pour into a greased 9x13 baking dish. Pour egg mixture over hashbrown mixture and mix together. Cook uncovered at 350 for 45-55 minutes.

*This can be made the night before.

Oriental Chicken Bake


Like I've said before, I'm not a huge fan of casseroles. I love this one. It's so easy and it's so good! My favorite thing about it is the crispy fried onions on top. Yum!

Oriental Chicken Bake
2 cups cooked shredded chicken
2 cups cooked rice
16 oz package frozen stir-fry vegetables, thawed
2 green onions, sliced
1 can cream of celery soup
1/3 cup water
2 Tbsp soy sauce
6 oz container french fried onions


Mix together soup, water, and soy sauce. In a 9x13 baking dish, mix together chicken, rice, vegetables, green onions, and soup mixture. Bake at 350 for 25 minutes. Sprinkle fried onions on top and bake for an additional 5 minutes until onions are golden. 


Serves 6

Chicken Divan

Chicken Divan
2 cups shredded cooked chicken
1 package frozen broccoli, thawed or 1 head of fresh broccoli
1 can cream of chicken soup
1/2 cup mayonnaise
1/4 tsp curry powder
1/2 cup shredded cheese
small package of slivered almonds
paprika


If you're using fresh broccoli, cook until partially done. Place chicken and broccoli in a 9x13 baking dish. Mix together soup, mayonnaise, and curry. Pour over chicken and broccoli. Mix well. Top with shredded cheese and almonds. Sprinkle with paprika. Bake at 350 for 30-40 minutes until heated through.

Spaghetti Casserole


I know this isn't the best picture but I promise this is really good. You only need about half of the sauce that this recipe calls for. So instead of halving it, I just use half of the sauce for this recipe and then freeze the rest. Then I can either make spaghetti, lasagna, or another batch of this.

Spaghetti Casserole
1 lb ground beef
1/2 cup chopped onion
1/2 cup chopped green pepper
2-3 cloves garlic, minced
2 cups beef broth
1 (14.5 oz.) can diced tomatoes, undrained
2 (8 oz.) cans tomato sauce
2 (6 oz.) cans tomato paste
1 1/2 tsp basil
1 1/2 tsp oregano
1 cup sliced mushrooms
1 can sliced olives
2 Tbsp sugar
2 cups mozzarella cheese
1 cup sour cream
1 cup cottage cheese
4 oz. cream cheese, softened
1/2 cup parmesan cheese
12 oz. spaghetti


Brown ground beef with onion, green pepper, and garlic; drain. Add beef broth and bring to a boil; reduce heat. Add tomatoes, tomato paste, tomato sauce, and seasonings. Bring to a boil and reduce heat. Add mushrooms, olives, and sugar. Simmer while spaghetti is cooking. Mix cream cheese, sour cream, cottage cheese, and parmesan cheese together. Spread in a 9x13 baking dish. Place cooked spaghetti on top of cheese mixture. Pour half of the sauce on top. Top with mozzarella cheese. Cover and bake at 325 for 30-40 minutes. Remove cover and place under the broiler for 5 minutes until the cheese is lightly browned.

Chicken Spaghetti

Chicken Spaghetti
8 oz spaghetti
2 cups cooked shredded chicken
1/2 cup diced onion
1 can diced tomatoes, drained
1 small can sliced olives, drained
8 oz sliced mushrooms
1 cup chicken broth
1/4 tsp garlic salt
1 tsp worcestershire sauce
salt and pepper to taste
2 cups grated cheese


Cook spaghetti until almost done. Combine all ingredients in a 9x13 baking dish. Cover and bake at 375 for 30 minutes.

Burrito Bake

This is an easy and quick meal to make. My kids love it!

Burrito Bake
1 lb ground beef
1/4 cup chopped onions
1 can refried beans
1 package taco seasoning
1 tube crescent rolls
1 cup shredded cheese
lettuce
tomatoes
salsa 
sour cream


Brown ground beef with onions; drain. Add refried beans and taco seasoning. Unroll crescent roll dough. Press in bottom and sides of a greased 9 x 13 baking dish. Make sure there are no holes in the dough. Spread meat mixture over crust. Sprinkle cheese on top. Bake at 350 for 25-30 minutes. Top with lettuce, tomatoes, and sour cream. 


Serves 6-8

Chicken Tortellini Bake

I saw this recipe on My Kitchen Cafe. I love tortellini so I thought I'd give it a try. It was such an easy dish to make and it's something that kids would love.

Chicken Tortellini Bake
16 oz. cheese tortellini (in the refrigerator section, not frozen)
2 cups chopped chicken
3 green onions, sliced
8 oz. fresh mushrooms, sliced
2 Tbsp. flour
1 cup chicken broth
3/4 cup sour cream
2 cups shredded cheese (any kind)


Cook tortellini in boiling water for 2-3 minutes. Drain and set aside. Heat oil in a large skillet. Add chicken and brown 2-3 minutes. Add green onions and mushrooms. Cook until chicken is cooked through. Sprinkle with flour. Mix well and cook for 1-2 minutes. Add chicken broth and stir until thickened. Add sour cream and stir until thickened. Spray a 9 x 13 baking dish. Layer tortellini, half of the cheese, chicken mixture, then the remaining cheese. Bake covered at 350 for 30 minutes. Uncover and bake for an additional 5 minutes.

Chicken Cordon Bleu Casserole

Chicken Cordon Bleu Casserole
2 cups cooked shredded chicken
2 cups chopped ham
2 1/2 cups cooked rice
8 oz. sour cream
1 can cream of chicken soup
1 1/2 cups shredded swiss cheese
bread crumbs


Mix together all ingredients except for bread crumbs. Place in a 9 x 13 baking dish. Top with bread crumbs. Bake at 350 for 30 minutes.

Tex-Mex Bake

I normally don't love casseroles but sometimes it's nice to have something really easy that you can quickly throw together and stick in the oven. This is one of those recipes.
1 lb ground beef
2 cups cooked rice
1 can chili beans, drained
1 can diced tomatoes with green chilies, drained
4 cups crushed tortilla chips
2 cups cheese
3 green onions, sliced
sour cream

Brown ground beef. Add rice, beans, and tomatoes. In a 9x13 baking dish, layer crushed tortilla chips, half of the cheese, beef mixture, and remaining cheese. Bake at 350 for 20 minutes. Top with green onions. Serve with sour cream.
