These little pizza bites were delicious! They were a perfect appetizer for our New Year's Eve party.

Pepperoni Pizza Puffs
3/4 cup flour
3/4 tsp baking powder
1 Tbsp Italian seasoning
pinch of salt
pinch of red pepper flakes
3/4 cup milk
1 egg, lightly beaten
1 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
1 cup cubed pepperoni
1/2 cup marinara sauce
Preheat oven to 375. Grease a 24-cup mini muffin tin. In a large bowl, whisk together flour, baking powder, Italian seasoning, salt, and red pepper flakes. Whisk in the milk and the egg. Stir in the mozzarella, parmesan, and pepperoni. Let stand for 10 minutes.
Stir the batter and pour into prepared muffin cups. Bake for 20-25 minutes, until puffed and golden.
Microwave the marinara sauce until warmed through. Serve the pizza puffs with the warm sauce for dipping.
Makes 24 mini muffins

Pizza roll-Ups
One of our family favorites is Chicken Roll-Ups. The last time I made them, my husband came up with the idea of putting pizza filling in the middle. So I came up with this recipe. My kids loved it! I think this will definitely be a new family favorite.

Pizza Roll-Ups
1/2 lb ground sausage, cooked
1/2 pkg mini pepperoni, or chopped pepperoni
1/2 cup chopped bell pepper
2 green onions, sliced
1 can (2.25 oz) sliced olives
1/4 cup spaghetti sauce
1 1/2 cup shredded mozzarella cheese
3 cans refrigerated crescent rolls
additional spaghetti sauce
Preheat oven to 375. Combine sausage, pepperoni, bell pepper, green onions, olives, spaghetti sauce, and cheese. Mix well. Spread each crescent roll so it is flat. Place a heaping Tbsp of filling on each crescent. Roll up, securing all sides. Place on a cookie sheet and bake for 20 minutes. Serve with heated spaghetti sauce.
Makes 24 roll-ups

Mexican Flatbread Pizza

Mexican Flatbread Pizza
1 lb ground beef
1/2 cup onion, diced
3 tsp chili powder
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp salt
1/4 cup salsa
1 can large biscuits (8 per can)
1 can refried beans
3 Tbsp salsa
1 1/2 cup shredded cheese
Chopped tomatoes
Chopped cilantro
In a large skillet, brown ground beef with onion; drain. Stir in chili powder, cumin, garlic powder, salt, and salsa. Simmer for 10-15 minutes. Set aside.
Preheat oven to 375. Flour work surface and roll out each biscuit until very flat. Place on a baking sheet and spray tops of biscuits with cooking spray. Bake for 8-10 minutes, or until they start to turn golden. Remove from oven and set aside.
In a medium saucepan, mix refried beans with salsa. Heat through.
To assemble, spread refried beans over each flatbread. Top with beef and sprinkle with cheese. Return to oven for 3-5 minutes, or until melted and bubbly. Mix together salsa and sour cream. Drizzle over the top of each pizza. Garnish with lettuce, tomatoes, and cilantro.

Calzones
I love this recipe. They are a little time consuming to make but it's something that is fun to make with kids. They are so yummy!
Calzones
1 loaf frozen bread dough, thawed
1/2 lb ground Italian sausage
1 can sliced olives
1/2 cup sliced fresh mushrooms
1/2 green pepper, chopped
pepperoni
mozzarella cheese
1 jar spaghetti sauce
Cut bread dough into 8 equal sections. Roll into flat circles. Place four pieces of dough on a baking sheet. Spoon some sauce into the center. Top with cheese, pepperoni, sausage, green pepper, mushrooms, olives, and more cheese.
Place the other pieces of dough on top. Pinch the edges so they are sealed.
Bake at 375 for 20-25 minutes. Serve with heated spaghetti sauce.
Makes 4 large calzones

Tostada Pizza
I got this recipe from the Better Homes and Gardens cookbook. It's not your typical pizza. I made it for my family last night and my kids loved it!
Tostada Pizza
1 lb ground beef
3/4 cup water
1 4-oz can diced green chile peppers, drained
2 Tb taco seasoning mix
1 tsp chili powder
1 Tb cornmeal
1 13.8-oz package refrigerated pizza dough
1 15-oz can pinto beans, rinsed and drained
1 cup shredded cheddar cheese
1 cup shredded lettuce
1 medium tomato, chopped
3 green onions, chopped
chopped cilantro
salsa
Cook ground beef until brown. Drain off fat. Stir in the water, green chiles, taco seasoning, and chili powder. Bring to a boil; reduce heat. Simmer, uncovered, for 15-20 minutes.
Preheat oven to 400. Grease a baking sheet and sprinkle with the cornmeal. Unroll pizza dough onto the baking sheet. Bake for 5 minutes.
In a small bowl mash pinto beans with a fork. Spread beans over partially baked dough to within 1/2 inch of edges. Spoon meat mixture over beans. Bake for 10 minutes or until crust is just golden. Sprinkle with the cheese. Bake for 1-2 minutes or until cheese melts. Top with lettuce, tomato, green onion, and cilantro. Serve with salsa.
